Everyone has their own goals. For some, having abs is one of them. And to be honest, you can have rock hard abs and not have a strong core. Conversely, you can have a strong core and no abs. As for me, it all started with wanting abs and in 2015 I injured myself. Two herniated discs which led to sciatica (and not to mention, mild scoliosis). After that, I knew I wanted to learn more about the body and how it works. In 2016, I started my research. In 2017, I became a NASM Certified Personal Trainer. I began by focusing on treating my herniated discs, sciatica and improving how I use my core. I zeroed in on both major and minor muscles, as well as neuromuscular training as exercise therapy. In a nutshell, training for me is deeper then "looking good". It's about literally FEELING good. My back pain improved tremendously, my sciatica is gone, I know how to use my core to prevent injuries and I'm fixing my muscle imbalances! I feel so much better! Quick dinner alert! I am always on the lookout for quick easy meals I can put together after work or on a Sunday afternoon for meal prepped lunches the next day. This Mexican spiced chicken fits the bill. And did I mention it is #whole30 approved? Win! All you need to do is pat dry your chicken breasts, coat the chicken with the season mixture and salt and pepper to taste. Coat the bottom on a non stick frying pan with olive oil, heat pan over medium high under hot. Add chicken, cook to 165 degrees F, flipping over once (cooking time will depend on thickness of chicken). Once chicken is cooked , remove the chicken from the pan. Add a little more oil and sautรฉ cut veggies of your choice. I like peppers and onions. Sprinkle more of the Mexican seasoning blend over veggies while they cook. Season with salt and pepper. Once veggies are done, add more oil to coat pan. At this point I add a few drops of lime vitality essential oil from Young Living. Add frozen cauliflower rice to pan and sautรฉ until desired doneness. While cauliflower rice cooks cut chicken into strips. Once cauliflower rice is done, add back in chicken and veggies to warm. Viola! Dinner/lunch prep done in no time at all. Mexican spice blend: 4 Parts of each of the following: Garlic Powder, Ground Coriander, Ancho Chile Powder, Mexican Oregano (or normal oregano), Smoked Sweet Paprika, Chipotle Chile Powder; 1 Part of each of the following: Ground Cinnamon, Ground Coffee, Ground Cumin. To make meal prep quick, I always make a large amount of the spice mixture to have on hand. We store it in small glass mason jars on our spice rack. I love using YL vitality essential oils when I cook. They are so easy to open and add, no need to worry about having fresh limes on hand and squeezing. I also like the flavor of the vitality oils over the fresh squeezed fruit, I find it less sour/bitter, more sweet and bright.
